Acacia is one of the most popular and sweetest honey varieties because of its mild delicate floral taste. It can remain in a liquid state for a long period of time due to its high concentration of fructose. Because of its low sucrose content, it is a great choice for diabetics.
If you are a honey connoisseur, you will eventually come across Acacia Honey. One of the lightest/clearest honeys in the world (in color and taste), Acacia Honey is one of the purest tasting honeys you will ever find. Whenever someone tells us they are not a “honey person” we offer them Acacia Honey, and 10 times out of 10, they are converted. It’s that good.
Acacia honey is very pale. If it hasn’t been mixed with other floral sources, it will look like liquid glass, very exquisite indeed. Known for its therapeutic action, Acacia cleanses the liver, regulates the intestine, and is anti-inflammatory for the respiratory system. The Acacia honey is very rich in micronutrients such as manganese, chromium, silicon, lithium, copper and vitamins such as A, B2, B5, PP, C, E. THE ORIGIN & FLOWER SOURCE
Traditionally gathered from the nectar of the Black Locust Tree (Robinia Pseudoacacia) during a two week period between May and June on the foothills of the Balkan Forests in the Northeast of Bulgaria near the Black Sea. This short blossoming period makes the honey hard to gather and highly prized.

Black locusts, unfortunately, don’t always produce honey. The nectar flow of the blossoms is subject to weather conditions, so a tree may have honey one year and not again for five years. WHAT IT GOOD FOR?
1) Good for pancreas. Because of its content of fructose which is higher than that of glucose, the acacia honey is sweeter. (compared to rape honey, which has a higher content of glucose). From here results that acacia honey has also a relatively lower glycemic index (does not burden the pancreas) .
2) Cleaning the liver. It is known for its therapeutic qualities because it cleanses the liver, conditions the intestines, and is beneficial for the respiratory system due to antibacterial properties – another benefit of honey.

Acacia honey is best to use every morning, one tea spoon before breakfast (if needed use more), or dissolved in warm water, milk, tea, or even better in apple vinegar. It is recommended to use it with chamomile tea, because it increases the effect of tea and honey
Ideal on yoghurt, fruit and ice cream. Delicious combined with Pecorino Romano, Feta and Gorgonzola and other strong flavoured cheeses. Drizzle over roasted tomatoes, pizza or bruschetta – it’s delicate, sweet flavour marries perfectly with garlic, truffles and chillies and seafood (crab, prawns, cod and salmon).
